Salsa verde is a staple in every Mexican kitchen. In Spanish salsa verde simply means
“green sauce” and is primarly made with a distant relative of the tomato from Mexico, the
naturally tart “Tomatillo” (pronounced “toe-mah-TEE-yo”). A tomatillo looks like green tomato
covered with a husk and they have a slightly more acidic, slightly less sweet flavor than ripe and
unripe tomatoes.
Blended with only a few fresh ingredientes as serrano peppers, cilantro, onion and garlic; our
version of this salsa is zesty, tangy, and with a spicy flavor that can range from mild to medium
tasting, depending on the spicy of the peppers.
In the cuisines of Mexico, it is often served with Mexican style dishes like enchiladas and
quesadillas or as topping. Anything savory, salty, meaty is even better with salsa on top such as
chicken, pork, grilled seafood, grilled or cooked veggies. You can even put salsa on a salad an
calling a winning meal, and of course, any and all tortilla-based meals.
